WINE MAKING
This blend comes from Vasarelli’s Currency Creek Vineyard. They insist on perfectly ripe, healthy grapes, low yields and harvesting at precisely the right time. Harvested in the cool of the early morning to preserve fruit structure. Extended time on skins pre and post ferment to allow gentle extraction. Matured for 10 months in 20% New and 80% seasoned French Oak Hogsheads to allow softening of tannins and acid and assist fruit / oak integration.
