VINTAGE NOTES
The fruit for this wine was sourced from Blakes Vineyard situated in the Moorabool Valley.
Harvest occurred on a sunny March day and the fruit was delivered to the winery in the late afternoon. Following whole bunch pressing the juice was cold settled for several days then racked to a stainless steel vessel in preparation for fermentation.
The stainless steel vessel was inoculated with an Active Dry Wine Yeast when the juice reached a temperature of 12 degrees.
Once fermentation was established 50% of the juice was transferred to a once used French oak Hogshead for some moderate impact from the oak.
The remainder of the juice completed fermentation in stainless steel.
Post ferment the barrel was topped and was not impeded from going through malolactic fermentation. The stainless steel portion was sulphured to inhibit malolactic fermentation.
Following 4 months elevage the wine was racked, blended, stabilised and filtered prior to bottling
